Blood Orange Superfruit Salad

This awesome summer salad is packed with nutrients that our medical weight loss physician approves of. Once the fruit is sliced, this is the easiest salad in the world to make—and it looks pretty too. Serve it on its own or with grilled chicken or fish for a perfectly balanced meal.

Blood oranges contain high levels of immunity-boosting vitamin C and folic acid, aka vitamin B9. Vitamin C is also an antioxidant that helps regulate metabolic functions and can aid in repairing tissues and wounds. Folic acid is a nutrient that is important for pregnant women, as it is crucial for red blood cell formation, which can prevent birth defects. It has also been shown to help prevent cardiovascular disease and certain forms of cancer.

Kiwi is also loaded with vitamin C, as well as other important nutrients including vitamins E and K, potassium, folate, manganese and fiber, which helps stave off hunger. Apples are ranked second among fruit for highest antioxidant activity and pack a serious fiber punch that couples with the kiwi to keep you full for hours on end.

5 blood oranges, sliced
4 kiwi, thinly sliced
2 apples, sliced
1 cup basil leaves
½ cup slivered almonds
1 tbsp extra virgin olive oil
Himalayan sea salt and freshly ground black pepper to taste

For the dressing:
Squeeze three slices of blood orange into a bowl. Combine with the extra virgin olive oil and whisk together. Season with Himalayan sea salt and freshly ground black pepper.

For the salad:

Arrange the fruit in layers in bowls or plates. Top with basil leaves and sprinkle with slivered almonds. Drizzle the blood orange dressing over each and season with the Himalayan sea salt and freshly ground black pepper to your liking.

Makes two servings.
