If you’ve tried any diets or weight management programs, you’ve probably experimented with various low calorie or low carb recipes. If not, you’re actually missing out! There are many low carb meals you can make that are both easy to prepare and delicious. The recipe for low carb Orange Chicken below is a favorite among members of our nutrition counseling center, and is an excellent source of lean protein. And when you’re striving for success with any of the diets and weight management programs you can follow, lean protein is essential. It’s also critical to losing fat and building muscle, and the more lean muscle mass you have, the more calories you’ll burn.
3-4 lbs of skinless chicken breasts
Himalayan Pink Crystal salt or sea salt
2/3 cup sugar-free orange marmalade
1 tablespoon ground orange rind
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
2 teaspoons brown sugar or Splenda
1/2 teaspoon onion powder
1/4 teaspoon ground ginger
Pre-heat the oven to 350 degrees. Line a baking dish with tin foil and lightly coat with olive oil. Rinse the chicken parts and pat dry. Place them each 1/2 inch apart in the baking pan. Sprinkle with the salt, pepper and paprika. Cover with foil. Bake for 30 minutes while you prepare the orange glaze.
Combine the sugar-free orange marmalade, vinegar, orange rind and lemon juice in a glass bowl. Microwave for 1-2 minutes—the mixture should be soft. Stir well.
After 30 minutes, remove the chicken breasts from the oven and drain the liquid. Increase oven heat to 400.
Brush the chicken breasts on both sides with ample amounts of the orange glaze.
Return chicken to oven and bake, uncovered, for about 25 to 30 more minutes.
Makes 8 servings.
