Minestrone Soup—Low Carb Style

Fall is the perfect time to load up on some delicious soups to warm us up and help us eat less overall—studies show that those who eat a cup of soup before their meal eat less calories at that sitting. Italian-inspired Minestrone soup is a cold weather favorite and is packed with an array of nutrient-rich ingredients that make it a powerfully healthy meal on its own.

The veggies in this soup are loaded with fiber to help fill you up, as well as the antioxidants, vitamins and minerals that we want members of our medical weight loss clinic to get into their diet for optimum health. Try out this recipe and let us know what you think!

Ingredients
1 cup white beans, drained
2 cups baby spinach
4 cups low-sodium chicken broth
1 can diced tomatoes
1/2 cup celery, finely sliced
1 small onion, finely diced
2 zucchini, trimmed, diced
1/8 cup extra virgin olive oil
3 cloves garlic, minced
2 ounces bacon, crumbled into bits
1 cup parsley, diced
2 bay leaves
1/2 teaspoon dried sage
1 teaspoon dried thyme
Kosher sea salt and pepper to taste
Freshly grated Parmesan cheese
Basil for garnish

Combine the low sodium chicken broth, extra virgin olive oil, white beans, celery, onion, zucchini, thyme, bay leaves, sage and tomatoes in a slow cooker and cover. Cook on low heat for six to eight hours, or if you’re on a time crunch, on medium heat for three to four. About half an hour before the soup is done, add the spinach, zucchini and bacon and cover. When the soup is finished cooking, remove the bay leaves. Season with Kosher sea salt and freshly ground pepper. Garnish with freshly grated Parmesan cheese and basil and serve.
