Mint Watermelon Popsicles

Summer is not over yet! At least if you live in Southern California, where is feels like we’re still in the middle of a heat wave. With workouts and outdoor activities in the mix, members of our weight loss center are always look for hot weather treats that our weight loss physician would approve of. This recipe for Lime Watermelon Popsicles is an excellent treat that actually packs the nutrients and keeps you hydrated.

Watermelon is a refreshing way to cool down and hydrate, considering it’s approximately 92 percent water. It’s a perfect component of a healthy diet, as it’s low in calories and has no fat, yet is loaded with antioxidants and amino acids, including lycopene and vitamins A, B6 and C. In addition, watermelon contains trace minerals and modest amounts of varied nutrients, including iron, calcium, potassium, folate, niacin, phosphorus, thiamin, riboflavin, magnesium, manganese, pantothenic acid, zinc, choline, selenium and copper. Talk about one well-rounded fruit!

This low carb recipe is extremely quick easy to prepare and only uses a few ingredients. It’s so refreshing and delicious, even the kids will enjoy this nutritious treat.

Ingredients
4 cups watermelon, diced
1/4 cup mint leaves, minced
1 tbsp lime zest
1/4 cup Manuca honey

Mix the watermelon, lime zest and Manuca honey together and puree in a food processor or blender until smooth. Stir in the mint. Pour the mixture into eight popsicle molds or two ice cube trays. Freeze for a minimum of eight hours or overnight, if possible. Hint: if you use ice cube trays, add the popsicle sticks or toothpicks when the popsicles are about halfway frozen.
