The Most Primavera of Pastas

Pasta primaveraOne of the best things about working with a weight loss center is access to healthy, low carb recipes that make it easier to adapt to a healthier diet and lifestyle. For those of you who have eliminated pasta from your diet, this recipe swaps in zucchini noodles for a very satisfying and delicious alternative. Plus, zucchini is an extremely healthy vegetable that is perfect for losing weight and weight loss maintenance.

Zucchini is one of the best sources of dietary fiber that you can find, ensuring that your hunger is satiated for hours. Yet it’s a very low calorie veggie, with only 17 calories per 100 grams, and has no cholesterol or fats. Zucchinis are a great source of flavonoid poly-phenolic antioxidants such as lutein, carotenes and zea-xanthin, and are also rich in vitamin A, magnesium, potassium, copper, folate and phosphorus. In addition, they boast moderate amounts of other vitamins and minerals, including iron, thiamin, riboflavin, zinc and manganese. The tomatoes add lycopene to the mix, as well as strong amounts of beta-carotene, biotin, vitamin C and vitamin K.

Ingredients
1 Zucchini
6 cherry or grape tomatoes
Fresh basil
1 tbsp extra virgin olive oil
3 cloves fresh garlic
Parmesan Cheese

Salt and pepper to taste

Instructions

Process the zucchini with the noodle maker of your choice.  In a heated pan, spoon in two tablespoons of olive oil. Add the fresh garlic and saute until lightly brown. Add tomatoes and cook for 1 minute, then add in teaspoon of salt and pepper to taste.  Add in zucchini and cook until zucchini softens, about 2 minutes. Remove from heat and add to plate. Chiffonade several leaves of basil and add on top along with grated parmesan cheese
