Vanilla Chai Pudding

Members of our weight loss center are always looking for healthy ways to satisfy a sweet tooth and curb hunger, and this delicious recipe for Vanilla Chai Pudding is the perfect way to do it without resulting in a diet-compromising sugar rush. While there are several natural goodies in this recipe, the secret ingredient in this pudding makes it extremely healthy and filling: chia seeds. It’s sweet enough to be served as dessert, but nutritious enough to make a healthy, hunger-satiating snack.

The benefits of chia seeds are vast and varied—which makes perfect sense since they were a diet staple of the ancient Mayan and Aztec civilizations for hundreds of years. Loaded with omega 3 fatty acids and fiber, they can satisfy even the hungriest of us. In just two tablespoons, you’ll get 10 grams of dietary fiber and high levels of other important nutrients such as calcium, phosphorus, manganese and magnesium, which are essential to achieving a healthy body and slimmer waistline. The spices featured in this recipe add a delicious flair, while helping to boost metabolism and providing an array of antioxidant benefits.

Ingredients
1½ cups unsweetened coconut milk
½ cup chia seeds
1 tbsp vanilla extract
2 tbsp pure maple syrup
½ tsp cinnamon
½ tsp nutmeg
½ teaspoon ginger, ground
freshly ground black pepper to taste
coconut whipped cream for topping

Combine all of the ingredients and whisk together. Put the mixture in a sealable container. Refrigerate overnight for best results, or a minimum of four hours. Separate into two servings and put into glass bowls. Top with coconut whipped cream and sprinkle cinnamon powder over each.

Makes two servings.
