The good news is, it’s easy to find recipes that taste delicious yet are low in calories and fat. The following recipe for Low-carb Apple Chicken is a favorite of members of our nutrition counseling center.


4 skinless chicken breasts
1/2 cup apple cider vinegar
1/2 cup apple or cranberry-apple herbal tea
1/4 cup organic honey
1 teaspoon soy sauce
Salt and pepper, to taste
I small onion, thinly sliced


Whisk the apple cider vinegar, tea, honey and soy sauce together. Places the chicken in a dish for marinating and pour the mixture over the chicken. Seal the chicken in either a bag or the dish, and let it marinate in the refrigerator three or four hours, turning the bag over every hour. You can also leave it to marinate overnight.

Pre-heat the oven to 425º. Remove the chicken from the bag and put in a 9×13 casserole dish for baking. Season the chicken with salt and pepper. Sprinkle the thinly sliced onions over the chicken. Bake for 45 minutes.
