Mediterranean Chicken Salad

Greek salad on wooden backgroundThis recipe for Mediterranean Chicken Salad is a favorite among members of our weight loss center because it’s incredibly healthy and nutritious, yet packed with flavor and super easy to make. Chicken is an ideal component for a low carb diet, as it provides lean and complete protein to our diet, which fills us up and helps our bodies build the lean muscle mass we need to burn more calories and look more toned. Plus, the chicken turns this salad into a substantial meal that can stand alone.

The tomatoes, cucumbers, spinach and bell peppers provide a bevy of antioxidants, vitamins and minerals that are essential for optimum health and weight loss. Note: don’t peel the cucumbers to garner their optimum benefits—most of their nutritional value is in the peel.

3 to 4 lean chicken breasts, skinless and chopped
2 medium tomatoes, chopped
1 large cucumber, diced
1 cup red bell peppers, chopped
1/2 cup black olives, sliced
6 cups spinach or romaine lettuce, chopped
1/2 cup feta cheese, crumbled
¾ cup scallions, diced
1 garlic clove, minced
1 tbsp fresh dill, diced
2 tbsp extra virgin olive oil
1/3 cup aged balsamic vinegar
Kosher salt and freshly ground pepper to taste
Put the lettuce in a bowl and add chicken evenly. Toss in the cucumbers, tomatoes, red bell peppers and black olives. In a separate bowl, whisk together the extra virgin olive oil, aged balsamic vinegar, dill and minced garlic until combined thoroughly. Sprinkle the salad with the crumbled feta cheese and then drizzle the dressing. Season with the Kosher salt and freshly ground pepper to your liking and serve.
Makes four servings.
