Salmon BLTs

Members of our weight management center are always looking for creative ways to infuse flavor into their low carb diets—and these Salmon BLTs fit the bill perfectly. Salmon is always an excellent choice for an entrée, as it’s packed with lean protein, which is essential for those on diets or weight loss management programs. A diet rich in lean protein helps us build lean muscle mass, which boosts our metabolism and the amount of calories we burn on a daily basis.

Salmon is also packed with other important nutrients that boost our health, including omega 3 fatty acids and essential amino acids, as well as vitamins such as A, B, B6, D and E. In addition, it contains appreciable amounts of minerals including iron, calcium, zine, phosphorus and magnesium. For the maximum health benefits, opt for wild-caught salmon.

All of the other ingredients are excellent choices for weight loss management—the lettuce is packed with fiber and the tomatoes boast lycopene and other antioxidant nutrients.

2 lbs of wild salmon
2tbsp extra virgin olive oil
8 slices of turkey bacon
4 ounces of lettuce, such as spinach, romaine or arugala
4 tomatoes, sliced
Himalayan sea salt and freshly ground pepper to taste

Lemon Vinaigrette dressing
1/2 cup olive oil
3 tablespoons of lemon juice
1 ½ tbsp. capers
Himalayan sea salt and freshly ground pepper to taste

Preheat the oven to 400 degrees. Season the salmon with Himalayan sea salt and freshly ground pepper. Add extra virgin olive oil to a skillet and cook on each side for four to six minutes. In another pan, cook the bacon for five minutes. Turn over the salmon and put the skillet in the oven for five to six minutes.

Arrange lettuce on places and add tomato slices to each stack. Next add two slices of bacon. Add another layer of lettuce and tomato, followed by the salmon on top.
Whisk together the ingredients for the lemon vinaigrette dressing (or your own favorite dressing) and drizzle over the salad stacks.

Makes four servings.
